For today’s Crockpot Tuesday, I took inspiration from That’s My Home recipe for Chunky Pork Chili. However, I changed some of the ingredients and directions to fit my needs. One example of this is I substituted corn for the black beans. My kids don’t really like black beans and I didn’t have any in my cupboard.
Here’s what you’ll need for the recipe I came up with:
2 pounds lean boneless pork loin – Cut in 1 inch slices
2 Small onions - chopped
2 Stalks celery – chopped
1 1/2 tsp Garlic powder
1 1/2 tsp Chili Powder
1/2 tsp ground cumin
1/2 tsp salt
1/4 tsp pepper
1 can Kernel Corn
2 – 8 oz cans tomato sauce
1 14 ounce can diced tomatoes (I used petite cut to help disguise the tomatoes)
1 can green chilies chopped
As I do in most of my Crock Pot Tuesday recipes, I put the meat in the crockpot frozen. The slices are still attached, so it looks like a pork loin at the start. Then put the onions, celery and all the spices in to the crockpot.
Pour in the tomato sauce, Diced Tomatoes, Chopped Chili peppers and drained Kernel Corn. Then stir it all together. Turn the crockpot on high. After 1 hour, open the crockpot and separate the chops. Continue cooking for about 2 hours on high.
After the chops had been cooking for 3 hours on high, I pulled them out of the crockpot and took two fork and broke them into bite size pieces. I then poured them back into the crockpot and stirred it altogether. I continued cooked for 2 1/2 hours on low.
Right after I put the meat back in, I had a little bit of time before we had to go to my girls’ dance class. I cooked my 19 cents Carolina Rice. To keep it warm and ready for when we got home from dance and were ready to eat, I made a foil tray and placed it on top of the Chili Pork in the crockpot.
To finish it off, I topped it with some shredded cheese.
I really enjoyed this meal and so did my kids. Even my daughter who doesn’t like pork cleared her plate. My 6 year old normally doesn’t eat chili because of the beans and since they were left out, she also cleared her plate.
Once again, not only was the meal delicious, but it’s also very frugal. This mean that fed 6 (and will probably provide lunch for 3 of us tomorrow) cost $5.33 and here’s the breakdown.
- Pork $3.34 (2 lbs at $1.67)
- Tomato Sauce – Free (stocked up when they were free at Walgreens)
- Diced Tomatoes – 50 cents
- Chopped Chilies – $1.00 (I’m not exactly sure on this price because I’ve had them in my cupboard for awhile)
- Onions and Celery – 15 cents
- Spices – 15 cents
- Rice – 19 cents

Great idea to put the meat in the crock pot frozen! I'll have to start doing that…
For the rice, I did cook it in a normal pan. Once it was done, I put it in the foil tray in the crockpot to keep it warm.
