Crockpot Tuesday – Super Simple Stroganoff

I’m a day late posting Crockpot Tuesday, because last night not only did we have dance, but I had a meeting I had to attend right after we ate so I didn’t get a chance to post my recipe.  Today’s Crockpot Tuesday recipe is an adaptation of a stovetop recipe that I have made for years from an old recipe book called 365 Ways to Cook Hamburger.

This was my first time adapting this recipe to the Crockpot and I did so out of necessity.  I had actually planned on preparing another crockpot dish in the morning, but I was busy running errands all day and didn’t get time to put the dish in the crockpot until 3:50 PM, which was too late for the dish I originally planned.  I   also needed something relatively simple since I was helping kids with homework at the same time.  Finally, I needed something that I could get ready at 4:00 and have read to eat at 6:30.

Today’s dish is Super Simple Stroganoff and it breaks my Crockpot “rules” because the meat was defrosted and I actually browned it before putting it in the crockpot.  I chose it because it used 2 items I just stocked up on at Giant Eagle for a great deal – Cream of Mushroom Soup and Sour Cream.

Here’s whay you’ll need

1 1/2 lbs Ground Round Beef
1 Small Onion chopped
1 Can Cream of Mushroom Soup
1 tsp Garlic powder
1/2 tsp Paprika
1/4 tsp Pepper

1 1/4 Cup Sour Cream
1 tbsp Flour

Brown the hamburger and diced onions.

Pour the hamburger and onions in the crockpot.  Stir in the can of Cream of Mushroom Soup and add garlic, paprika and pepper.  Stir it all together.  Turn your crockpot on low for 2 hours.

Before we left for dance class, I boiled some noodles, and like I did with the rice in last week’s Crockpot Tuesday Recipe, I placed the cooked noodles in a foil tray on top of meat in the crockpot.  This kept them warm and saved me time when we got home from dance class.

Eight minutes before we ate (while I cooked the green beans), I took out the noodle tray, and added the sour cream and the flour, then stirred it all together and cooked for the 8 minutes.

Here’s my final dish.  Once again, not only was it simple and delicious (each of my kids asked for seconds), but it’s also very very frugal.  This meal (including sides), that fed 6, cost me only $3.32, and here’s the breakdown:

Hamburger 1 1/2 lbs at $1.99/lb = $3.00
Cream of Mushroom soup – 17 cents
Sour Cream – 5 cents
Spices – 10 cents
Beans – FREE
Noodles – FREE
