Today’s Stockpile recipe is an adaptation on the Apple Juice Chicken Salad found in this Free Ebook. It called for pineapples, but I didn’t have that so I swapped it for Jarred peaches which I did have in my stockpile, and added apple.
Here’s what you’ll need for this delicious and pretty Fruit Chicken salad
- 4 boneless chicken breasts cubed (see poaching directions below)
- 1 cup canned or jar peaches
- 1/2 apple (peeled and diced)
- 3/4 cup celery (diced)
- 1 tsp sweet relish
- 1/2 medium onion (diced)
- 3 TBSP apple juice
- 3/4 cup mayonnaise
Like most of my Crockpot Tuesday recipes, my meat was once again frozen. In addition, I only had an hour before I wanted to eat. So I had to think of a quick way to cook my chicken. Poaching came to mind. I have poached fish before, but never chicken so I did a little research. Here is what I ended up doing.
- I place my frozen chicken pots in a heavy skillet.
- Poured in 2 cups of water.
- Added two teaspoons of chicken bouillon and Sprinkled Morton’s Nature’s Seasons Seasoning Blend on chicken and in the liquid.
- Brought the liquid to a boil, then quickly reduced heat to a low and simmered for 20 minutes.
- Turned off the heat and let sit for another 30 minutes.
(If my chicken had been thawed, I would have cut the times in half)
While the chicken was poaching, I diced up the peaches, apples, onions and celery and then poured them in the bowl.
I then diced the chicken, added it to the bowl and mixed together.
Next, I added the dressing which was a mix of Mayonnaise and apple juice. I also added the relish at this time and stirred it altogether.
I served the salad on romaine hearts and garnished it with the peaches that remained in the jar.
Overall, a simple, but very pretty dish. I definitely would feel comfortable entertaining with this Fruit Chicken salad. My husband, who normally doesn’t like fruit in salads, actually told me it was delicious, and my oldest told me it was his second favorite meal ever. So next time peaches go on sale, I’ll definitely be stocking up.
