Giant Eagle Deal Meal – 6 Layer Casserole

As I mentioned in the Giant Eagle Matchups for the week, I have a Giant Eagle Deal Meal for you.  Today’s recipe uses the Carolina Rice that is free this week and the Ground Round that is $2.99/lb.  It will also use 1/2 a block of cheese that you can get on sale for $1 this week

In addition it uses a couple items that I have previously gotten for free at Giant Eagle – Muir Glen Tomato Paste and Heniz Worcestershire Sauce.  The meal this week is 7-Layer Casserole and you will need about an hour to prepare it for cooking time, but it is super easy and my kids and husband gobbled it down.

Here’s a list of the ingredients:

  • 1 cup uncooked rice – FREE
  • 1 can whole kernel corn  (Use this $1/3 Libby’s printable to save on this) – undrained
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 beef bouillon cube
  • 1 1/2 cups hot water
  • 1 can Tomato paste  - FREE from this deal in the past at Giant Eagle
  • 1 tsp Worcestershire sauce – FREE from this deal in the past at Giant Eagle
  • 3/4 tsp Poultry Seasoning
  • 1/4 tsp Oregano
  • 1 medium onion chopped
  • 3 stalks celery chopped
  • 1 lb Lean Ground Beef – $2.99
  • 4 oz sliced cheese – $.50 after $5/5 Kraft products coupon

Pre-heat your oven to 375 degrees and get out a 2 1/2 quart casserole dish.

For Layer 1 – Mix the rice with the corn , half the salt and pepper, bouillon cube and 1/2 of the hot water or 3/4 cup.  Mix it all together.

Layer 2 – Fill a measuring cup with 3/4 cup hot water and then add in the tomato paste, Worcestershire Sauce, Poultry Seasoning and Oregano.  Stir it all together and then pour 1/2 of it over Layer 1.

Layer 3 – Put your diced celery and onions on next

Layer 4 – Pack your 1 pound on raw ground round on top of the other 3 layers. 

Layer 5  – Pour the remaining tomato paste mixture on top. 

Cover it tightly with foil and place in your pre-heated 375 degree oven for 45 minutes.

Layer 6 – After 45 minutes, pull it out of the oven and uncover.  Place thinly sliced cheese on top.  I used Colby Jack, because it’s what I had on hand, but cheddar would be good too.  Then place the casserole back in the oven for an addition 15 minutes uncovered.

Here’s the finished 6 Layer Casserole Giant Eagle Deal.  This meal that fed six cost under $4.50 using the Giant Eagle deals from this week and items I had in my stockpile from past sales.
