Stockpile Meal–Baked Oatmeal & Ham

Continuing with the theme of last week’s Stockpile Meal Recipe – Breakfast for Dinner, the recipe today is Baked Oatmeal & Ham.  About a year ago, there were deals for Free Oatmeal and I still have quite a bit in my stockpile, so I figured I would use it for Breakfast for Dinner. 

I also used some slightly overripe nectarines and apples that were in my refrigerator.  I was happy to keep these from going to waste.

The other great thing about this dish is it only gets one pan dirty because you can mix the ingredients right in your baking dish.

Here’s what I used in my Baked Oatmeal.

  • 3 Cups Oatmeal
  • 3/4 cup brown sugar (I think I might reduce this to 1/2 cup next time because it was a little sweet for my tastes)
  • 1 tsp baking powder
  • 2 Eggs
  • 1/2 cup butter – melted
  • 1 cup Milk (not in photo)
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1 diced nectarine
  • 1 diced apple (the second one in the picture was too ripe to use)

Preheat your oven to 375 degrees and spray a non-stick 9×13 dish with non-stick cooking spray.

On one side of the baking dish mix together the dry ingredients.  This will create the perfect spot on the other side to scramble the 2 eggs a bit.  Then add the rest of the wet ingredients and mix it all together.

Place it in your oven and cook for 25 to 30 minutes.  Your house will smell yummy while it’s cooking.

I served the baked oatmeal with sliced ham steaks that I had gotten for $1.99 each.  Everyone loved the dish, even my daughter who doesn’t like oatmeal.  She thought it tasted like rice.
