Normally I value our time at the Kitchen table as a family for dinner, but due to unforeseen circumstances, today’s Crockpot Tuesday was a eat on the run meal. I literally dished it up into bowls, handed one to each of the kids with a fork and spoon and into the car we went so we could get to where we needed to be.
I must admit that I was glad to have a one dish meal ready that could be served so quickly. It definitely saved time making sandwiches and saved money and time from stopping at the drive-thru. These would have been the options, had I not put the meal in the crockpot in the morning.
Today’s Crockpot Tuesday meal, that literally saved me, is Beef & Stuffing.
Here’s what you’ll need:
- 2 lbs Round Steak – I got mine on sale HERE.
- 1 Can French Onion Soup – I used Campbell’s Select Harvest which is on sale this week at Giant Eagle
- 2 Small or 1 Medium Onion Diced
- 1 Box Stove Top Stuffing (not pictured)
- 1 Stick Butter (not pictured)
- Mozarella Cheese to top (not pictured)
Place half of the diced onions on the bottom of the crockpot. Then place 1/2 the round steak on top of that. As usual, my meat was still frozen. Then repeat with the other half.
Pour the French Onion Soup on top and turn the crockpot on HIGH. I always do this if my meat is frozen for at least the first hour. After an hour turn it to low and continue cooking for about 5 hours.
After 5 hours on low, I opened the crockpot and this is what the meat looked like. I took a fork and somewhat shredded it into bite size pieces.
To prepare the stuffing, I melted a stick of butter – which equates to 1/2 a cup. I stirred the box of stuffing into the butter. Then I placed it on top of the beef-onion mixture. The stuffing picked up some of the liquid from the French onion soup, so it was nice and moist.
Turn the crockpot back on high and cook for about 30 minutes more. 5 minutes or so before serving, I added some shredded mozzarella cheese on top. The 5 minutes gave the cheese enough time to melt.
Here is the finished dish. Unfortunately, I don’t have a plated pictured since we did eat on the run.
You could add a bit more flavor to the meal by including mushrooms with the onions. This was my original plan only to find I was out of mushrooms.
Since beef prices have risen, this meal cost more then some of my other Crockpot Tuesday meals, but still was very reasonable costing only $7.60 or $1.27 per person and here’s the breakdown:

Definitely cheaper than the drive thru and much healthier too for a meal on the run.
